Our ginger harvest is close to completion but that's no reason not to enjoy Ohio-grown young ginger year-round. We find that freezing it preserves the flavor and allows for the greatest versatility. Here's how:
1. Clean ginger. We prefer to do this with a vegetable brush under running water.
2. Allow ginger to air dry or dry with a towel.
3. Place in an air tight container or plastic bag. Store in the freezer for up to six months.
4. Grate with a microplane while still frozen to add zesty sweet ginger flavor to your favorite recipes.
